Story
Born from a sustainability initiative in Caldas, Colombia, this coffee is part of Forest Coffee’s Reforest Project; an ambitious effort planting thousands of native trees to restore coffee-growing ecosystems and empower local farming families.
This particular lot is grown on small farms surrounding Manzanares, nestled in the rolling highlands at 1,850 meters. The cherries Caturra, Colombia, and Castillo, are handpicked at peak ripeness, then undergo a 24-hour anaerobic pre-fermentation before being washed, mechanically dried for even consistency, and stabilized for 30 days to let the flavors settle and bloom. The result is a cup with tartness of Concord grape skin, golden Turbinado sugar, and a nutty pecan finish, reflecting both the care of the farmers and the unique character of the region.
