Story
The Guava Banana coffee comes from El Vergel Estate in Fresno, Tolima, by farmers Elías and Shady Bayter. This microlot highlights the precision and dedication of small-scale, high-altitude coffee farming in Colombia.
Ripe Red and Yellow Caturra cherries are hand-selected and undergo 48–60 hours of anaerobic fermentation, a process that brings fruit-forward and winey flavors. The beans are initially dried in the sun on raised beds, then moved to mechanical dryers, followed by a 45-day stabilization in GrainPro bags to harmonize the flavors.
This Medium Roast is bright and complex, with notes of winey red fruits, hibiscus and sweet candied lemon. Perfect as a pour over for an expressive cup, or as a vibrant espresso with plenty of character.
