Story
The Guava Banana coffee comes from El Vergel Estate in Fresno, Tolima, by farmers Elías and Shady Bayter. This microlot highlights the precision and dedication of small-scale, high-altitude coffee farming in Colombia.
Ripe Red and Yellow Caturra cherries are hand-selected and undergo 48–60 hours of anaerobic fermentation, a process that brings fruit-forward and winey flavors. The beans are initially dried in the sun on raised beds, then moved to mechanical dryers, followed by a 45-day stabilization in GrainPro bags to harmonize the flavors.
The result is a cup that’s bright and complex, with notes of winey red fruits, hibiscus and sweet candied lemon. Guava Banana showcases both the expertise of the farmers and the unique character of Tolima’s highlands, offering a truly expressive and memorable coffee experience.
